Pancakes and Galettes

French sweet pancakes and savory galettes are among the most delicious in the world.

The forerunner of the sweet pancake is the savory galette, which has been known for more than 5,000 years. Galettes are made from a mixture of buckwheat flour and water. In the beginning they were eaten plain, but later people began to experiment and add various ingredients to them, such as eggs or different kinds of cured meats.

Somewhat later came the sweet pancake, served as a dessert. Leftover galette batter, eggs, cinnamon and other ingredients were used to make it – and the first sweet pancake was born.
